Crawfish Fettuccini
1-1/2 sticks butter (1/4 pound per stick) 1-1/2 onion, chopped 1 bell pepper, chopped 2 ribs celery, chopped 2 tablespoon flour 1 pound crawfish tails 1/2 pound Velveeta cheese, cubed 1 pint Half 'n Half cream Parmesan cheese 1 clove garlic, minced 1/2 package fettuccine noodles Salt and pepper to taste 1 tablespoon pimento 1 tablespoon jalapeno peppers
Saute' first 4 ingredients for 15 minutes. Add flour. Cover and cook on low fire for 15 minutes (stirring frequently). Add crawfish tails. Stir well. Cover and cook for 20 minutes (stir often). Add cheese, cream, garlic, jalapeno, salt and pepper. Cover and cook for 20 minutes. Meanwhile boil noodles, drain and pour into sauce. Gently blend together, then pour into buttered dish and sprinkle on parmesan cheese. Bake at 350 degrees Fahrenheit for 15 to 20 minutes.
