Crab Cakes
1 pound white crabmeat 1 tablespoon soft margarine 1/4 cup sweet pepper, minced 1/4 cup parsley, minced 1/2 cup green onion, minced 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1 egg white 1 tablespoon Worcestershire sauce 1 teaspoon prepared mustard 3/4 cup bread crumbs
In a skillet with margarine saute' sweet peppers, parsley and green onion for 5 minutes. Add crabmeat, salt and cayenne pepper. Cook for 3 minutes. Remove from heat and cool. Mix egg white, mayonnaise, Worcestershire sauce and mustard all together. Mix this and bread crumbs with crab mixture.
Form into 10 patties, coat with bread crumbs and dot with margarine. In a heavy iron skillet, bake at 400 degrees Fahrenheit oven for 30 minutes to get good crisp patties.
This is a good low cholesterol recipe.
